Our Winemaking Approach

Serious Wine,
Thoughtfully Reimagined

If the wine is not great before alcohol is removed, it will never be great after.

At PARAGRAPH, winemaking always comes first. Alcohol removal is not a shortcut — it is a discipline. Our approach is simple: if the wine is not great before alcohol is removed, it will never be great after.

Exceptional Base Wine

Alcohol removal leads to a lighter aromatic expression, which is why quality must begin at the source.

PARAGRAPH works exclusively with wines selected for their natural expressiveness, structural depth, and ability to retain character after dealcoholization. For the Tempranillo, we source from premium Spanish vineyards, with a strong focus on elevated sites above 700 meters and low-yielding old vines aged between 30 and 50 years. The final wine combines base wines matured for between 2 and 4 years prior to blending, combining structure and harmony with power and aromatic freshness.

For the Chardonnay, we select fruit from cooler, higher-altitude vineyard sites in Southwest France, where Atlantic and Pyrenean influences slow ripening and concentrate flavor while preserving the acidity the wine needs to carry through to its finish.

Leading
Technology

PARAGRAPH uses low-temperature vacuum distillation — one of the gentlest and most aroma-preserving methods available.

An integrated aroma recovery system captures and protects the wine's delicate aroma during the process, before being carefully reintegrated. This allows the wine to retain complexity, identity, and a sense of place.

After dealcoholization, the wine rests in bottle for a minimum of two months, allowing texture and aromatics to settle into a more balanced final expression.

Our Philosophy

Because great wine is not defined by what is taken away, but by what remains.

More Ways to Experience Wine

Wine has never been just one thing. It moves easily from the everyday to the exceptional, from a quiet glass to a shared table.

What's changing is not the role of wine, but the range of moments it can belong to — moments that are lighter, more flexible, yet no less meaningful. PARAGRAPH opens that space with wines that carry the structure, balance, and intent of fine winemaking, made for more occasions, without compromise.

More Ways to Make Wine

Making wine without alcohol starts the same way as any fine wine — with intent, selection, and precision at every step.

It begins with premium base wines from selected vineyards in Spain and France, chosen for their structure, aromatic intensity, and depth. High-altitude sites bring freshness, balance, and complexity.

Alcohol is then gently removed at low temperature, with aroma recovery to preserve the wine's character. No added flavors. Low in sugar.

More Ways to Taste Wine

Tasting has always been at the heart of wine — an act of attention to structure, balance, and what unfolds in the glass.

Approached this way, alcohol-removed wine asks for the same mindset. Not a focus on what is missing, but on what is present — texture, freshness, aromatic expression, and length. PARAGRAPH invites wine lovers to taste with confidence, using the same language and habits that belong to wine. With food. With time. With attention.

Wine, Without Shortcuts

The objective is not to imitate wine, but to preserve what makes it meaningful in the first place — structure, balance, and aromatic expression.
